The leavening process is a very delicate phase, which determinate the very peculiar flavour and consistency of all bakery products. The structure of our leaving chambers is made of polyurethane isothermic panels covered in aluminium, which creates an internal compartment with regulated and constant temperature and humidity, in order to support the production of carbon dioxide in the dough to obtain a perfect and homogenized leavening. The window in the front door permits to check in any time the development of the leavening.Structure and frontage made in aluminium. Floor in stainless steel.
